Instructions

  1. Prepare Zucchini: Wash and cut the zucchini in half horizontally, then slice them into fries.
  2. Whisk Eggs: In a medium bowl, whisk the eggs until smooth and combined.
  3. Mix Coating: In another medium bowl, combine the panko breadcrumbs, garlic salt, and grated Parmesan cheese. Mix well until evenly blended.
  4. Coat Zucchini: Dip each zucchini slice first into the whisked eggs, then immediately into the breadcrumb mixture. Toss to coat each slice evenly with the breadcrumb mixture.
  5. Arrange in Air Fryer: Place the coated zucchini fries in a single layer inside the air fryer basket. You may need to cook in batches to avoid overcrowding.
