Zucchini Fries Ingredients
- 2 large zucchini, cut in half horizontally and sliced
- 2 eggs
- 2 cups Panko breadcrumbs
- 2 teaspoons Lawry’s garlic salt (or any brand of garlic salt)
- 1/3 cup grated Parmesan cheese
Instructions
- Prepare Zucchini: Wash and cut the zucchini in half horizontally, then slice them into fries.
- Whisk Eggs: In a medium bowl, whisk the eggs until smooth and combined.
- Mix Coating: In another medium bowl, combine the panko breadcrumbs, garlic salt, and grated Parmesan cheese. Mix well until evenly blended.
- Coat Zucchini: Dip each zucchini slice first into the whisked eggs, then immediately into the breadcrumb mixture. Toss to coat each slice evenly with the breadcrumb mixture.
- Arrange in Air Fryer: Place the coated zucchini fries in a single layer inside the air fryer basket. You may need to cook in batches to avoid overcrowding.
- Air Fry: Cook at 400°F (204°C) for 7-8 minutes or until the fries are golden brown and crispy. Remove and serve immediately.
