Description

These Big Mac Quesadillas blend the classic flavors of a Big Mac sandwich with the crispy, cheesy goodness of quesadillas. Ground beef cooked with onions is layered with a special tangy sauce, cheddar cheese, and fresh toppings between flour tortillas, then cooked until golden and crisp for a fun and flavorful meal perfect for any occasion.

Ingredients

Scale

Sauce Ingredients

  • 1 cup mayonnaise
  • 4 tsp ketchup
  • 2 tbsp dill pickle juice
  • 1 tbsp minced dill pickles
  • 1 tbsp yellow mustard
  • 2 tsp white vinegar
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika

Beef Mixture

  • 2 lbs ground beef
  • 2 yellow onions, chopped
  • 2 tsp sea salt
  • 1 tsp black pepper

Assembly

  • 8 8-inch flour tortillas
  • 6–8 cups cheddar cheese (can mix with sharp or pepper jack for a twist)
  • 4 cups shredded lettuce
  • 8–10 dill pickles, sliced
  • Optional: sliced jalapeños or red chilies for heat
  • Optional: sesame seeds for garnish (Big Mac nod)

Instructions

  1. Cook the beef and onions: Heat a skillet over medium heat and cook the ground beef along with the chopped yellow onions until the beef is browned and cooked through. Season with 2 teaspoons sea salt and 1 teaspoon black pepper for maximum flavor.
  2. Prepare the special sauce: In a bowl, combine mayonnaise, ketchup, dill pickle juice, minced dill pickles, yellow mustard, white vinegar, 1 teaspoon sea salt, black pepper, and smoked paprika. Mix thoroughly and set aside to let the flavors meld.
  3. Clean skillet and assemble quesadillas: Wipe the skillet clean and return it to medium heat. Start layering by placing one flour tortilla in the skillet, add a generous amount of cheddar cheese, then an even layer of the cooked beef mixture, and drizzle with the prepared special sauce. Top with another tortilla.
  4. Cook until golden and crispy: Cook the assembled quesadilla for 2 to 3 minutes on each side until the tortillas are golden brown and the cheese inside is melted and gooey.
  5. Finish and serve: Remove the quesadilla and slice it into quarters. Top each slice with shredded lettuce, sliced dill pickles, extra special sauce, and optional sliced jalapeños or red chilies for heat. Sprinkle with sesame seeds for a fun Big Mac inspired presentation. Serve immediately.

Notes

  • You can substitute cheddar cheese with a mix of sharp cheddar and pepper jack for an extra flavor twist.
  • Adjust jalapeños or red chilies quantity according to your spice preference.
  • Wipe the skillet clean after cooking beef to prevent burnt bits while cooking quesadillas.
  • Use 8-inch tortillas for perfect sized quesadillas that cook evenly.
  • For a gluten-free option, substitute flour tortillas with gluten-free tortillas.
