Description

This Bold & Flavorful Mexican Lasagna combines the comforting layers of traditional lasagna with the spicy zest of Mexican cuisine. Made with seasoned ground beef, black beans, salsa, tortillas, and melted cheese, this hearty casserole is perfect for a family dinner, potlucks, or meal prep. It offers a delicious fusion that is easy to make and packed with vibrant flavors.

Ingredients

Scale

Main Ingredients

  • 1 pound (450g) ground beef or ground turkey
  • 1 packet (or 2 tablespoons) taco seasoning
  • 1 (15 oz / 425g) can black beans, drained and rinsed
  • 1 (15 oz / 425g) jar salsa or enchilada sauce
  • 1/2 cup (120ml) water
  • 8–10 small flour tortillas (or corn tortillas for gluten-free)
  • 2 cups (200g) shredded cheddar or Mexican blend cheese

Optional Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 small diced onion or green bell pepper (for sautéing with the meat)
  • Sour cream or Greek yogurt (for topping)
  • Chopped cilantro (for garnish)
  • Diced avocado or guacamole (for garnish)
  • Sliced jalapeños (for garnish)
  • Shredded lettuce or chopped tomatoes (for garnish)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Brown the Meat: In a large skillet over medium heat, cook the ground beef until fully browned. Drain off any excess grease to keep the lasagna from becoming too oily.
  3. Simmer Meat Mixture: Stir in the taco seasoning, water, black beans, and salsa with the browned meat. Let this mixture simmer for about 5 minutes until it slightly thickens and the flavors meld.
  4. Layer Tortillas: Arrange 2–3 tortillas to cover the bottom of the prepared baking dish as the first layer.
  5. Add Meat and Cheese Layers: Spread a generous layer of the meat mixture over the tortillas, then sprinkle a good amount of shredded cheese on top.
  6. Repeat Layers: Continue layering tortillas, meat mixture, and cheese until all ingredients are used up, finishing off with a top layer of shredded cheese for a perfect cheesy crust.
  7. Cover and Bake: Cover the baking dish loosely with aluminum foil and bake for 20 minutes. This helps the layers cook evenly and stay moist.
  8. Uncover and Continue Baking: Remove the foil and bake for an additional 10–15 minutes until the lasagna is bubbly and the cheese turns golden brown.
  9. Rest Before Serving: Allow the lasagna to rest for 5–10 minutes after baking. This settling time helps the layers firm up, making it easier to slice.
  10. Add Garnishes and Serve: Top with your choice of sour cream, chopped cilantro, diced avocado or guacamole, sliced jalapeños, shredded lettuce, or chopped tomatoes. Serve warm and enjoy!

Notes

  • Use sturdy flour tortillas for best structure; corn tortillas work well for gluten-free options.
  • Drain beans well to avoid a watery casserole.
  • Add corn or sautéed vegetables to enhance texture and nutrition.
  • Let the lasagna rest after baking, which helps it set and simplifies slicing.
  • Use a pizza cutter or serrated knife for neat, clean slices.
  • Cover with foil during initial baking to prevent drying out, then uncover to brown cheese.
