Description

  • 1 tablespoon olive oil
  • 6 slices bacon, uncooked and chopped
  • 1 large onion, finely chopped
  • 16 ounces sour cream (preferably Oberweis Cultured Sour Cream)
  • 2 tablespoons minced chives
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook the bacon: Heat a medium skillet over medium-high heat. Add the olive oil and chopped bacon, cooking until the bacon is crispy, about 6-8 minutes. Use a slotted spoon to remove the bacon from the skillet and place it on paper towels to drain excess fat.
  2. Caramelize the onions: Using the bacon grease left in the skillet, add the chopped onion and cook for about 10 minutes, stirring occasionally, until the onions are fully browned, translucent, and caramelized. Remove from heat and let cool and drain any excess grease.
  3. Mix the dip: In a medium bowl, combine the sour cream, cooked bacon, caramelized onions, minced chives, shredded cheddar cheese, and salt and pepper to taste. Stir thoroughly to blend all ingredients evenly.
