Cheeseburger Pockets are a fun and delicious twist on the classic cheeseburger, combining seasoned ground beef, melted cheddar cheese, and pickles inside a golden-baked dough pocket. Beef Filling
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 tablespoons ketchup
- 2 tablespoons mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 1/2 cups shredded cheddar cheese (or American cheese)
- 1/4 cup pickles, chopped (optional)
Dough and Finishing
- 1 package (8 count) refrigerated biscuit dough (or pizza dough if preferred)
- 1 egg, beaten (for egg wash)
- Optional toppings: shredded lettuce, sliced tomatoes, extra pickles, additional ketchup or mustard
Instructions
- Cook the Beef: In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and cooked through. Drain any excess grease to keep the filling from being too oily.
- Season the Mixture: Add ketchup, mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper to the beef. Stir well and cook for an additional 2 minutes to blend the flavors. Remove from heat.
- Add Cheese and Pickles: Stir in the shredded cheddar cheese and chopped pickles, if using, until the cheese melts and the mixture is well combined.
- Preheat Oven: Set your oven to 375°F (190°C) to get it ready for baking the pockets.
- Prepare the Dough: Flatten each biscuit into a 4-5 inch wide circle or roll out pizza dough into similar-sized circles for the pockets.
- Fill the Pockets: Spoon about 2 tablespoons of the beef and cheese mixture into the center of each dough circle, making sure not to overfill.
- Seal the Pockets: Fold the dough over the filling to form a pocket, then pinch the edges tightly to seal the filling inside.
- Apply Egg Wash: Place the pockets on a parchment-lined baking sheet and brush each one with beaten egg. This gives the pockets a beautiful golden and glossy finish after baking.
- Bake: Bake in the preheated oven for 12-15 minutes or until the dough is golden brown and cooked through.
- Serve: Allow the cheeseburger pockets to cool slightly before serving. Add optional toppings like shredded lettuce, sliced tomatoes, extra pickles, and sauces such as ketchup or mustard as desired.

- You can customize the filling by adding diced jalapeños for a spicy kick or substituting the beef with ground turkey or chicken for a lighter option.
- If you prefer a crispier crust, bake on a wire rack set over the baking sheet to allow air circulation.
- These pockets can be made ahead and frozen before baking; bake directly from frozen, adding a few extra minutes to the cooking time.
- For a vegetarian version, replace beef with cooked lentils or a meat substitute and use vegetarian Worcestershire sauce.
