Ingredients

Potatoes
- 2 pounds russet potatoes, peeled and diced
- 1 tablespoon olive oil
- Salt and black pepper, to taste
Meat & Seasoning
- 1 pound ground beef (or ground turkey)
- 1 packet (1 oz) taco seasoning
- â…“ cup water
Dairy
- 1½ cups shredded cheddar cheese (or Mexican blend)
Toppings (optional)
- Sour cream
- Salsa
- Diced tomatoes
- Green onions
- Jalapeños
- Cilantro

Instructions
- Preheat and Roast Potatoes: Preheat your oven to 425°F (220°C). Toss the peeled and diced potatoes with olive oil, salt, and black pepper to coat evenly. Spread them out on a baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through to ensure even browning.
- Cook Taco Meat: While the potatoes roast, heat a skillet over medium heat. Add the ground beef and cook until it is no longer pink, about 6–8 minutes. Drain any grease then stir in the taco seasoning and ⅓ cup of water. Let it simmer for 2–3 minutes until the sauce thickens and coats the meat well.
- Assemble the Dish: Once the potatoes are roasted, transfer them to an oven-safe skillet or casserole dish. Evenly layer the seasoned taco meat over the potatoes, then sprinkle the shredded cheddar cheese on top.
- Bake to Melt Cheese: Return the assembled dish to the oven and bake for 10 minutes until the cheese is melted, bubbly, and slightly golden.
- Add Toppings and Serve: Remove from the oven and add your favorite toppings such as sour cream, salsa, jalapeños, diced tomatoes, green onions, cilantro, and avocado. Serve hot and enjoy this comforting taco-inspired meal.
Notes
- You can substitute ground turkey for ground beef for a leaner option.
- If you prefer spicier flavors, add extra jalapeños or hot sauce.
- Use a Mexican cheese blend for a more authentic taste with a sharper flavor.
- Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
- To make the dish vegetarian, replace meat with cooked black beans or a meat substitute.
