Description

Chicken Alfredo Lasagna Roll Ups combine tender cooked chicken, creamy ricotta, and rich cheeses rolled inside tender lasagna noodles, all baked in a luscious Alfredo sauce. This comforting Italian-American dish offers an easy twist on traditional lasagna with individual portions perfect for a family dinner.

Ingredients

Scale

Lasagna Roll Up Mixture

  • 6 lasagna noodles (cooked according to package instructions)
  • 10 ounces cooked chicken, shredded or chopped
  • 8 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Sauce and Topping

  • 1 1/4 cups shredded mozzarella cheese (divided: 1 cup in mixture, 1/4 cup for topping)
  • 15 ounce jar Alfredo sauce (about 1 1/2 cups)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Generously spread ½ cup of Alfredo sauce over the bottom of an 8×8-inch baking dish to prevent sticking and add flavor.
  2. Cook Noodles: Prepare the lasagna noodles according to package instructions until al dente. Drain and set aside on a flat surface for assembling the roll ups.
  3. Prepare Filling: In a medium mixing bowl, combine the cooked chicken, ricotta cheese, 1 cup shredded mozzarella, parmesan cheese, egg, chopped parsley, salt, and pepper. Mix until well incorporated to create a creamy, flavorful filling.
  4. Assemble Roll Ups: Lay out the cooked lasagna noodles flat on a large cutting board. Evenly distribute and spread the chicken and cheese mixture over each noodle, covering all noodles with the filling.
  5. Roll Noodles: Carefully roll up each filled noodle from one end to the other, ensuring the seam is on the bottom to keep the rolls intact while baking. Place each roll seam-side down into the prepared baking dish.
  6. Add Sauce and Cheese Topping: Pour the remaining Alfredo sauce evenly over the rolled noodles, spreading it to cover the tops fully. Then sprinkle the remaining 1/4 cup shredded mozzarella cheese over the sauced roll ups for a golden cheesy crust.
  7. Bake: Place the baking dish in the preheated oven and bake for 25 minutes, or until the sauce is bubbly and the cheese on top has melted and lightly browned.
  8. Serve: Let the roll ups cool slightly for a few minutes after baking. Serve immediately while warm for the best creamy and cheesy experience.

Notes

  • Use freshly grated parmesan and mozzarella for best flavor and melting quality.
  • Cook noodles just until al dente to prevent them from becoming too soft when baked.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • For added flavor, sprinkle a little extra fresh parsley or cracked black pepper on top before serving.
  • Chicken can be pre-cooked in various ways: roasted, poached, or grilled, depending on your preference.
