Ingredients
Scale
Lasagna Roll Up Mixture
- 6 lasagna noodles (cooked according to package instructions)
- 10 ounces cooked chicken, shredded or chopped
- 8 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup shredded parmesan cheese
- 1 large egg
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Sauce and Topping
- 1 1/4 cups shredded mozzarella cheese (divided: 1 cup in mixture, 1/4 cup for topping)
- 15 ounce jar Alfredo sauce (about 1 1/2 cups)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Generously spread ½ cup of Alfredo sauce over the bottom of an 8×8-inch baking dish to prevent sticking and add flavor.
- Cook Noodles: Prepare the lasagna noodles according to package instructions until al dente. Drain and set aside on a flat surface for assembling the roll ups.
- Prepare Filling: In a medium mixing bowl, combine the cooked chicken, ricotta cheese, 1 cup shredded mozzarella, parmesan cheese, egg, chopped parsley, salt, and pepper. Mix until well incorporated to create a creamy, flavorful filling.
- Assemble Roll Ups: Lay out the cooked lasagna noodles flat on a large cutting board. Evenly distribute and spread the chicken and cheese mixture over each noodle, covering all noodles with the filling.
- Roll Noodles: Carefully roll up each filled noodle from one end to the other, ensuring the seam is on the bottom to keep the rolls intact while baking. Place each roll seam-side down into the prepared baking dish.
- Add Sauce and Cheese Topping: Pour the remaining Alfredo sauce evenly over the rolled noodles, spreading it to cover the tops fully. Then sprinkle the remaining 1/4 cup shredded mozzarella cheese over the sauced roll ups for a golden cheesy crust.
- Bake: Place the baking dish in the preheated oven and bake for 25 minutes, or until the sauce is bubbly and the cheese on top has melted and lightly browned.
- Serve: Let the roll ups cool slightly for a few minutes after baking. Serve immediately while warm for the best creamy and cheesy experience.
Notes
- Use freshly grated parmesan and mozzarella for best flavor and melting quality.
- Cook noodles just until al dente to prevent them from becoming too soft when baked.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- For added flavor, sprinkle a little extra fresh parsley or cracked black pepper on top before serving.
- Chicken can be pre-cooked in various ways: roasted, poached, or grilled, depending on your preference.
