Chicken Alfredo Roll-Ups

  • 4 large boneless, skinless chicken breasts, cooked and shredded (or rotisserie chicken)
  • 8 cooked lasagna noodles (al dente)

  • 1/2 tsp garlic powder

  • 1/2 cup unsalted butter
  • 2 cups heavy cream
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Prepare the Alfredo Sauce: In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer, stirring frequently to prevent burning. Allow the cream to thicken for 3-4 minutes. Stir in the Parmesan cheese, salt, and pepper. Continue simmering until the sauce is smooth and creamy. Remove from heat and set aside.
  2. Prepare the Chicken Filling: In a large mixing bowl, combine the shredded cooked chicken, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, and spinach if using. Mix thoroughly to combine all ingredients evenly.
  3. Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish to prevent sticking. Lay each cooked lasagna noodle flat on a clean surface. Spoon the chicken and cheese mixture along the center of each noodle. Carefully roll the noodles up tightly and place them seam-side down in the prepared baking dish.
