Ingredients
Scale
For the Chicken Tacos
- 1 pound ground chicken
- 8 small street taco flour tortillas
- 1/2 cup shredded Parmesan cheese (divided)
- Salt and pepper to taste
For the Caesar Salad Filling
- 2 hearts of romaine lettuce, chopped
- 1/2 cup croutons, chopped
- 1/4 cup Caesar dressing
Instructions
- Prepare the Caesar Salad: Chop the romaine lettuce finely, smaller than usual for better texture. Place it into a bowl and add chopped croutons, 1/4 cup shredded Parmesan cheese, and Caesar dressing. Toss everything well until combined and set aside.
- Preheat Cooking Surface: Heat a blackstone grill, electric griddle, or large skillet over medium-high heat to get ready for cooking the chicken tacos.
- Mix the Chicken: In a bowl, combine the ground chicken with the remaining 1/4 cup Parmesan cheese and a pinch of salt and pepper. Mix thoroughly. Divide the mixture into 8 even portions.
- Assemble Smash Tacos: Take one portion of the chicken mixture and smear it evenly across one side of a tortilla, covering the entire surface. Repeat for all tortillas and chicken portions.
- Cook the Tacos: Place the tortillas chicken-side down onto the preheated grill or skillet. Cook for about 3 minutes until the chicken is cooked through and has formed a slightly crispy layer. Flip the tortillas and cook the other side for an additional 30 to 90 seconds until warmed and lightly browned. Remove from heat.
- Serve: Top each hot chicken-smash tortilla with a generous portion of the prepared Caesar salad. Serve immediately and enjoy the delicious combination of crispy chicken with fresh salad flavors.
Notes
- Using a blackstone grill or electric griddle provides the best cooking surface for even searing of the chicken layer.
- Chopping the romaine finely helps the salad integrate better in the taco without large leaves overpowering each bite.
- You can substitute flour tortillas with corn tortillas if preferred, but expect slightly different texture and flavor.
- For a lighter option, use a low-fat Caesar dressing or reduce the amount as desired.
- Ensure the chicken is cooked thoroughly, reaching an internal temperature of 165°F (74°C) for food safety.
