Instructions
- Prepare the Peanut Butter Mixture: In a medium mixing bowl, combine the creamy peanut butter, softened unsalted butter, powdered sugar, and vanilla extract. Stir the ingredients together until the mixture is smooth and well-combined, forming a thick dough-like consistency.
- Form the Candy Balls: Roll the peanut butter mixture into small, bite-sized balls. Place the balls evenly on a parchment-lined baking sheet. Freeze the tray for 15 to 20 minutes to allow the peanut butter centers to firm up.
- Melt the Chocolate: While the peanut butter balls chill, melt the chocolate chips with the optional coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring well between each, until the chocolate is completely smooth and melted.
- Dip the Peanut Butter Balls: Using a fork, dip each chilled peanut butter ball into the melted chocolate. Lift and gently tap the fork to remove any excess chocolate, then place the coated candy back onto the parchment-lined baking sheet.
- Set the Chocolate Coating: After all candies are coated, refrigerate the baking sheet for 15 to 20 minutes until the chocolate hardens and sets to create a firm, glossy shell.
