Instructions
- Melt Chocolate and Butter: In a large saucepan over low heat, melt the semisweet chocolate chips and butter together until just melted and smooth, making sure to stir occasionally to prevent burning.
- Cool Chocolate Mixture: Remove the pan from heat and let the chocolate mixture cool slightly. It should remain melted but not hot enough to melt the marshmallows when added.
- Combine Add-ins: Stir in the chopped toasted walnuts and pastel mini marshmallows gently into the cooled chocolate mixture until evenly distributed.
- Divide Mixture: Separate the mixture evenly among three pieces of parchment paper for shaping.
- Shape Logs: Using the parchment paper, shape each portion of the chocolate mixture into an 8 to 10 inch log, pressing gently to form a firm shape.
- Coat with Coconut: Roll each log carefully in the sweetened shredded coconut until fully coated, ensuring the coconut sticks well to the surface.
- Chill Logs: Wrap the parchment paper around the logs and place them in the refrigerator to chill and firm up for at least 2 hours or overnight for best results.
- Slice Logs: Once chilled and firm, remove the logs from the refrigerator and slice into ½ to 1 inch thick slices using a sharp knife.

- You can substitute walnuts with pecans or almonds if preferred.
