Ingredients
Scale
Chicken and Broth
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 2 tablespoons olive oil
Vegetables and Aromatics
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
Seasonings
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Other
- 1/4 cup all-purpose flour
- 1 cup orzo pasta
- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Cook the chicken: Heat olive oil in a large pot over medium heat. Add the diced chicken and cook for 5-7 minutes until no longer pink. Remove chicken and set aside.
- Sauté vegetables: In the same pot, add onion, carrots, and celery. Cook for 4-5 minutes until softened. Add garlic and cook for another minute until fragrant.
- Add spices: Stir in thyme, rosemary, salt, and black pepper. Cook for 1 minute to release flavors.
- Add flour: Sprinkle flour over vegetables and stir well to combine. Cook for 1-2 minutes to remove raw flour taste.
- Pour broth: Gradually add chicken broth while stirring to avoid lumps. Bring to a simmer.
- Cook orzo and chicken: Add orzo pasta and return chicken to the pot. Reduce to medium-low heat and cook for 10-12 minutes until orzo is tender, stirring occasionally.
- Add peas and cream: Stir in frozen peas and heavy cream. Heat through for 2-3 minutes.
- Adjust seasoning and rest: Taste the pot pie mixture and adjust salt and pepper as needed. Remove from heat and let rest for a few minutes.
- Garnish and serve: Sprinkle freshly chopped parsley over the dish before serving.
Notes
- Use low-sodium chicken broth if you want to control salt levels.
- For a dairy-free option, substitute heavy cream with coconut cream.
- If orzo is unavailable, substitute with small pasta shapes like acini di pepe or small shells.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
- Fresh herbs like thyme or rosemary can be used instead of dried, using about 1 tablespoon of fresh for every teaspoon of dried.
