Ingredients
Scale
Orzo and Asparagus
- 1 cup orzo pasta
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
Garlic Butter Sauce
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
Liquids and Cheese
- 2 cups vegetable broth (or chicken broth)
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
Seasoning
- Salt and pepper to taste
- Optional: zest of 1 lemon, for brightness
Instructions
- Cook the Orzo: Bring a medium pot of salted water to a boil. Add the orzo and cook for about 8–10 minutes, until al dente. Drain and set aside to be added later.
- Prepare the Garlic Butter: In a large skillet over medium heat, melt the butter together with the olive oil to create a rich base for sautéing.
- Sauté the Garlic: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
- Cook the Asparagus: Add the trimmed and cut asparagus to the skillet and sauté for 4–5 minutes, or until the asparagus is just tender and bright green, retaining some crispness.
- Combine Orzo and Vegetables: Reduce the heat to low, and add the cooked orzo pasta to the skillet with the sautéed asparagus.
- Add Broth, Cream, and Cheese: Stir in the vegetable broth, heavy cream, and Parmesan cheese. Mix thoroughly until the mixture becomes creamy and is heated through fully.
- Season and Serve: Season the dish with salt and pepper to taste, and if desired, add the zest of 1 lemon for added brightness. Serve warm for the best flavor and texture.
Notes
- You can substitute vegetable broth with chicken broth if not vegetarian.
- For a lighter version, use half-and-half instead of heavy cream.
- Freshly grated Parmesan offers the best flavor compared to pre-grated varieties.
- Adjust asparagus cooking time depending on thickness to maintain desired tenderness.
- This dish pairs well with a simple green salad or grilled chicken for a complete meal.
