Ingredients
Scale
Chicken and Seasoning
- 2 tablespoons olive oil
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 packet (1 oz) ranch seasoning mix
- 3 cloves garlic, minced
Noodles and Sauce
- 4 cups chicken broth
- 8 oz egg noodles
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove chicken and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add broth and seasoning: Pour in the chicken broth and stir in the ranch seasoning mix, combining well.
- Cook noodles: Bring the mixture to a boil. Add the egg noodles and reduce heat to medium-low. Cover the skillet and simmer for 8-10 minutes until the noodles are tender.
- Make sauce and combine: Stir in the heavy cream, Parmesan cheese, and the cooked chicken. Simmer for an additional 2-3 minutes until the sauce thickens and everything is heated through.
- Season to taste: Taste the dish and add salt and pepper as needed to adjust the seasoning.
- Garnish and serve: Sprinkle with chopped fresh parsley for a fresh touch before serving.
Notes
- Use fresh parsley as a garnish for added color and flavor but it is optional.
- For a lighter version, substitute heavy cream with half-and-half or milk, though the sauce will be less thick and creamy.
- Feel free to add vegetables like peas or spinach during the noodle cooking step for extra nutrition.
- Ensure not to overcook the noodles during simmering to avoid mushiness.
