Ingredients
Scale
Beefloaf
- 1 ½ pounds ground beef
- 1 cup breadcrumbs
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
Caramelized Onions
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
Broth Mixture
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
Topping
- 8 slices Swiss cheese
Instructions
- Preheat Slow Cooker: Set your slow cooker to the low setting to prepare it for cooking the beefloaf.
- Combine Beefloaf Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, salt, and black pepper, mixing thoroughly until the ingredients are well incorporated.
- Shape and Place Loaf: Shape the meat mixture into a loaf and carefully place it inside the preheated slow cooker.
- Sauté Onions: Heat butter and olive oil in a skillet over medium heat. Add the thinly sliced onions and cook them slowly, stirring occasionally, until they become caramelized and golden, about 10-15 minutes.
- Add Caramelized Onions: Spread the caramelized onions evenly over the top of the beefloaf in the slow cooker.
- Prepare Broth Mixture: In a separate bowl, mix together the beef broth and Worcestershire sauce. Pour this mixture gently over the beefloaf and onions in the slow cooker.
- Cook the Beefloaf: Cover the slow cooker with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the beefloaf is fully cooked through.
- Add Swiss Cheese: During the last 30 minutes of the cooking time, arrange the slices of Swiss cheese over the top of the beefloaf. Cover again to allow the cheese to melt completely.
- Finish and Serve: Once the beefloaf is cooked and the cheese has melted, carefully remove the loaf from the slow cooker. Slice and serve hot, garnished with the melted Swiss cheese on top.
Notes
- For best results, use fresh ground beef with a good fat content (around 80/20) to keep the loaf moist and flavorful.
- If you prefer a firmer loaf, increase the breadcrumbs slightly.
- You can add a splash of red wine to the broth mixture for extra depth of flavor.
- The caramelized onions can be made a day in advance and refrigerated to save time.
- Serve with mashed potatoes or a green salad for a complete meal.
