Ingredients
Scale
Pasta
- 16 oz spaghetti noodles
Chicken Mixture
- 2 cups cooked rotisserie chicken, shredded
- 20 oz cream of chicken soup
- 1 cup salsa
- 1 cup sour cream
- 1 teaspoon taco seasoning
Cheese
- 2 cups shredded Monterey Jack cheese, divided (1 1/2 cups for the mixture, 1/2 cup for topping)
Garnish (Optional)
- Dried parsley
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
- Cook Pasta: Boil the spaghetti noodles according to the package directions until al dente. Drain thoroughly to avoid soggy pasta in the casserole.
- Mix Ingredients: In a large bowl, combine the cooked spaghetti, shredded rotisserie chicken, cream of chicken soup, salsa, sour cream, taco seasoning, and 1 1/2 cups of Monterey Jack cheese. Stir well until all ingredients are evenly incorporated.
- Prepare Baking Dish: Spray a 9×13-inch baking dish with non-stick baking spray to prevent sticking. Transfer the pasta and chicken mixture into the dish, spreading it evenly.
- Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded Monterey Jack cheese evenly over the top of the mixture. Optionally, sprinkle dried parsley for a fresh touch and color contrast.
- Bake: Cover the baking dish with foil and bake in the preheated oven for 25 to 30 minutes, or until the cheese is melted and bubbly. Remove the foil during the last 5 minutes if you want a slightly browned top.
Notes
- Using rotisserie chicken saves time and adds great flavor, but leftover cooked chicken works well too.
- For a spicier kick, add diced jalapeños or hot salsa instead of mild salsa.
- Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
- To make it gluten-free, substitute spaghetti noodles with gluten-free pasta.
- Adding vegetables like chopped bell peppers or corn can boost nutrition and add texture.
