- 1 medium zucchini, sliced into thick rounds
- 1 medium red onion, cut into wedges
Marinade
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 1 tsp garlic powder
- ½ tsp red pepper flakes (adjust to taste)
Instructions
- Prepare the Marinade: In a large bowl, combine soy sauce, honey, garlic powder, and red pepper flakes. Mix well to create a flavorful marinade.
- Marinate the Chicken: Add the chicken pieces to the marinade, ensuring all pieces are well coated. Cover and let them soak for at least 30 minutes, or up to overnight in the refrigerator for maximum flavor.
- Prepare the Vegetables: While the chicken marinates, cut the red, yellow, and green bell peppers into bite-sized pieces, slice the zucchini into thick rounds, and cut the red onion into wedges.
- Assemble the Kabobs: Thread the marinated chicken and vegetables alternately onto soaked skewers to prevent burning during grilling.
- Grill the Kabobs: Preheat your grill to medium-high heat, approximately 400°F (200°C). Grill the skewers for 10-12 minutes, turning occasionally to ensure even cooking, until the chicken is fully cooked and has a nice char.

- Soak wooden skewers in water for at least 30 minutes before threading to prevent burning on the grill.
