Description

This vibrant Chimichurri sauce is a fresh and zesty condiment made with parsley, cilantro, olive oil, and a blend of spices. Perfect for adding an herby, tangy kick to grilled meats, vegetables, or as a flavorful marinade, this easy-to-make sauce comes together in just 15 minutes with no cooking required.

Ingredients

Scale

Herbs

  • 1 cup (tightly packed) fresh flat-leaf parsley (thick stems removed)
  • 1/2 cup (tightly packed) fresh cilantro (thick stems removed)

Liquids & Oils

  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar

Spices & Seasonings

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 2-3 cloves garlic (minced)

Instructions

  1. Combine Ingredients: Add the fresh parsley, cilantro, olive oil, red wine vinegar, smoked paprika, dried oregano, salt, minced garlic, and crushed red pepper flakes into a food processor. Pulse several times until the mixture reaches your desired consistency, whether slightly chunky or smooth.
  2. Rest and Store: Transfer the chimichurri to a jar or bowl and let it sit at room temperature for 15-20 minutes to allow the flavors to meld. Afterward, cover and refrigerate the sauce; it will stay fresh for up to 3 days.

Notes

  • Adjust salt and red pepper flakes to taste according to your preference.
  • For best flavor, allow the chimichurri to rest before serving to let the ingredients marry.
  • This sauce pairs excellently with grilled meats, roasted vegetables, or as a dipping sauce.
  • Use fresh herbs for the brightest flavor.
