- Freeze Peaches: Freeze the chopped fresh peaches on a parchment-lined baking sheet for 2 to 3 hours until they are solid and fully frozen. This helps achieve the ideal texture for the sorbet.
- Blend Ingredients: Transfer the frozen peaches to a food processor. Add the sugar and lemon juice, then blend everything together until the mixture becomes creamy and smooth, resembling soft sorbet.
- Adjust Sweetness: Taste the blended sorbet and add a pinch of salt if desired to balance the sweetness and enhance flavor. Blend briefly to incorporate if salt is added.
- Serve or Freeze: For a soft-serve style sorbet, serve immediately. Alternatively, transfer the mixture to a loaf pan and freeze for at least 4 hours to allow it to firm up into a scoopable sorbet.
Notes
- Peeling the peaches helps achieve a smoother texture. To peel easily, blanch peaches in hot water for 30 seconds, then transfer to ice water.
