Ingredients
Scale
Potato Puffin Mixture
- 3 cups firm mashed potatoes, cold
- 1 (5.4 oz) garlic and herb soft cheese (such as Alouette or Boursin)
- 1 ½ cups shredded sharp white cheddar cheese, divided
- 3 large eggs, beaten
- 2 Tbsp grated Parmesan cheese
- 2 Tbsp chopped chives, divided
- 1 tsp garlic salt
- ½ tsp black pepper
To Serve
- 1 (8 oz) container sour cream or crème fraîche
- Additional chopped chives for garnish
- Cooking spray or melted butter for greasing muffin tin
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the puffins.
- Prepare Potato Mixture: In a medium mixing bowl, combine the cold mashed potatoes with garlic and herb soft cheese, 1 cup of shredded sharp cheddar cheese, beaten eggs, grated Parmesan cheese, 1 tablespoon of chopped chives, garlic salt, and black pepper. Mix everything thoroughly to create a uniform mixture.
- Grease Muffin Tin: Liberally brush or spray the cups of a standard 12-cup muffin tin with cooking spray or melted butter to prevent sticking.
- Portion the Mixture: Using a 4 oz ice cream scoop, evenly distribute the potato mixture among the muffin cups, filling each cup fully but not overflowing.
- Add Cheese Topping: Sprinkle the remaining ½ cup of shredded sharp cheddar cheese evenly on top of each portioned mixture in the muffin cups.
- Bake Puffins: Place the muffin tin in the preheated oven and bake for 23-25 minutes, or until the puffins are fully set and the tops turn golden brown.
- Remove from Muffin Tin: After baking, run a knife gently around the edges of each puffin to loosen them from the muffin tin cups.
- Serve: Serve the puffins immediately, optionally adding a dollop of sour cream or crème fraîche on top and garnishing with the remaining chopped chives for a fresh finish.
Notes
- Use cold, firm mashed potatoes for best results to help the puffins hold their shape during baking.
- Variations can include adding crispy bacon bits or substituting cheddar with a cheese of your choice.
- These puffins are best served warm straight from the oven but can be reheated in the oven to retain texture.
- To make ahead, prepare the mixture and store in the refrigerator, then bake on the day of serving.
- Make sure to grease the muffin tins thoroughly to avoid sticking and make removal easier.
