Ingredients
Scale
Cauliflower
- 1 head cauliflower, chopped into small florets
Dairy & Fats
- 3 ounces low-fat cream cheese (⅜ brick)
- 2 tablespoons salted butter (¼ stick)
Flavorings
- 1½ teaspoons minced garlic (sautéed if not pre-minced)
- 1 tablespoon chopped fresh rosemary (optional)
Instructions
- Boil Cauliflower: Bring a medium pot of water to a boil. Add the cauliflower florets and cook for 8-10 minutes, or until the cauliflower is fork-tender. Drain the cauliflower thoroughly to remove excess water.
- Blend Ingredients: Place the cooked cauliflower into a blender or food processor along with the low-fat cream cheese, salted butter, minced garlic, and optional rosemary. Pulse the mixture until it becomes smooth and creamy, scraping down the sides as necessary for an even consistency.
- Serve: Transfer the garlic mashed cauliflower to a serving bowl. Garnish with extra rosemary if desired, and serve warm as a delicious side dish.
Notes
- For a stronger garlic flavor, sauté the minced garlic in butter before adding to the blender.
- Drain the cauliflower well after boiling to prevent watery mashed cauliflower.
- Fresh rosemary adds a fragrant herbal note, but can be omitted or substituted with other herbs like thyme.
- This dish pairs well with grilled meats or roasted vegetables.
