  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp Italian seasoning

For the Garlic Parmesan Coating:

  • 4 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp lemon juice (for extra flavor)


Instructions

  1. Preheat & Prep the Ingredients: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil. Wash and cut the baby potatoes into halves or quarters.
  2. Season the Potatoes: In a large bowl, toss the potatoes with 2 tbsp olive oil, ½ tsp salt, ¼ tsp black pepper, and ¼ tsp paprika. Spread them evenly on one side of the baking sheet.
  3. Prepare the Chicken: In the same bowl, combine chicken breasts, 1 tbsp olive oil, melted butter, remaining salt, black pepper, paprika, Italian seasoning, and red pepper flakes. Coat the chicken well with the seasoning mix. Place the chicken breasts on the baking sheet next to the potatoes.
  4. Make the Garlic Parmesan Coating: In a small bowl, mix minced garlic, grated Parmesan cheese, and chopped parsley. Sprinkle this mixture evenly over the chicken and potatoes.
  5. Bake to Perfection: Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Halfway through cooking, flip the potatoes for even crispiness.
