Ingredients
Scale
Potatoes
- 5 pounds potatoes
Dairy & Fats
- 6 tablespoons butter
- 1/3 cup light sour cream (+ 2 tablespoons extra)
- 1/4 cup milk (+ 1 tablespoon extra)
- 2 ounces cream cheese
Seasonings
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon seasoning salt
- 1 1/2 teaspoons dried parsley
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 3 generous shakes lemon pepper
Instructions
- Prepare the Potatoes: Peel and chop the potatoes into chunks. After peeling, weigh them to use about 4 pounds for cooking. Place the potatoes in a large pot, cover with water, and bring to a boil over high heat.
- Cook Potatoes: Once boiling, reduce heat to medium and simmer the potatoes for 20-25 minutes or until they are fork-tender. Drain the water thoroughly.
- Mash Potatoes: Using a potato masher, mash the potatoes while leaving some chunks for texture. Avoid using a mixer to prevent a gluey consistency.
- Add Dairy and Seasonings: Stir in butter, sour cream, milk, and cream cheese one ingredient at a time until well combined. Then, add salt, pepper, seasoning salt, dried parsley, garlic powder, onion powder, and lemon pepper. Mix well.
- Adjust and Serve: Taste and adjust seasonings if needed. If cream cheese is not available, increase sour cream slightly as a substitute. Serve warm and enjoy!
Notes
- Do not use an electric mixer to mash potatoes; it can make them gluey.
- If you don’t have cream cheese, simply add more sour cream.
- You can adjust the amount of seasonings according to your taste preferences.
- Using light sour cream and milk helps keep the dish creamy but lower in fat.
