For the Burritos

  • 2 Large (12 inch) flour tortillas
  • 1 package Farm Rich Smokehouse Pulled Beef Brisket (prepared according to package instructions)
  • 2 cups white rice (cooked)
  • 1 15 ounce can black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup BBQ sauce

For the Rice Mixture

  • 1/4 cup light sour cream
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro (finely chopped)


Instructions

  1. Prepare the Rice Mixture: In a medium bowl, combine the cooked white rice, light sour cream, finely chopped cilantro, and fresh lime juice. Stir well until the mixture is fully combined and creamy. Set aside.
  2. Assemble the Burritos: Lay each large flour tortilla flat and evenly distribute half of the cilantro-lime rice mixture, black beans, prepared pulled beef brisket, and shredded cheddar cheese onto the center of each tortilla. Roll each tortilla tightly like a burrito, folding in and tucking the sides to seal the filling inside.
