A quick and flavorful Instant Pot chicken fried rice recipe that combines tender chicken, scrambled eggs, vegetables, and fragrant jasmine rice cooked to perfection under pressure. This one-pot dish is perfect for a busy weeknight meal, delivering classic fried rice taste with minimal effort and fast cooking time.

			Proteins
- 1 lb chicken breast, diced
 - 2 eggs, whisked
 
Vegetables & Aromatics
- 3 garlic cloves, minced
 - 1 cup diced carrots
 - ½ cup frozen peas
 
Rice & Broth
- 1½ cups jasmine rice, rinsed
 - 1¼ cups chicken broth
 
Oils & Sauces
- 2 tsp vegetable oil, divided
 - 3–4 tbsp soy sauce
 - 1 tsp sesame oil
 
Instructions
- Cook the eggs: Set the Instant Pot to sauté mode and add 1 tsp of vegetable oil. Pour in the whisked eggs and cook, stirring gently, until scrambled and just set. Remove the eggs from the pot and set aside.
 - Sauté garlic: Add the remaining 1 tsp of vegetable oil to the Instant Pot. Add the minced garlic and sauté briefly until fragrant, about 30 seconds to 1 minute, being careful not to burn it.
 - Deglaze and layer ingredients: Pour in the chicken broth to deglaze the pot, scraping up any browned bits on the bottom. Carefully layer diced chicken, diced carrots, and rinsed jasmine rice on top of the broth, but do not stir.
 - Pressure cook: Close the Instant Pot lid and set the valve to sealing. Select High Pressure and cook for 3 minutes.
 - Pressure release: Allow the Instant Pot to naturally release pressure for 10 minutes, then carefully perform a quick release to vent any remaining pressure.
 - Combine and finish: Open the lid, then stir in the scrambled eggs, frozen peas, soy sauce, and sesame oil until everything is well combined. Serve hot and enjoy your Instant Pot chicken fried rice.
 
Notes
- Rinsing jasmine rice removes excess starch and helps keep the fried rice from becoming mushy.
 - Adjust soy sauce quantity based on your taste preference for saltiness.
 - Use fresh or frozen peas; if frozen, no need to thaw before adding.
 - Letting the pressure release naturally helps the rice finish cooking evenly.
