- 1 package of Java Chip Oreo’s
- 1 cup of mini Chocolate Chips
Cheesecake Filling
- 2 8-ounce packages of Cream Cheese – softened
- 1 Envelope of Knox Gelatin
- 1/4 cup of water
- 1/2 cup of Greek Yogurt
- 1/4 cup of Heavy Cream
- 1 cup of Sugar
- 1 teaspoon of Vanilla Extract
- 1 teaspoon of Lemon Juice
Instructions
- Bloom the Gelatin: Place 1/4 cup of water in a small bowl and sprinkle the envelope of Knox Gelatin over the water. Allow it to sit for a few minutes until the gelatin absorbs the water and becomes bloomed, which helps the cheesecake filling set properly.
- Mix the Cream Cheese Base: In the bowl of a stand mixer, combine the softened cream cheese, Greek yogurt, and heavy cream. Mix on low speed until all ingredients are blended smoothly. Scrape down the sides of the bowl to incorporate any remaining bits and mix again until the mixture is completely smooth.
- Add Sweeteners and Flavorings: Add the sugar, vanilla extract, and lemon juice to the cream cheese mixture. Blend on low speed until well combined, making sure to scrape down the bowl once more to ensure all ingredients are evenly incorporated and creamy.
