Ingredients
Scale
Cheese and Eggs
- 1 block (about 8 oz) feta cheese, cubed
- 4 large eggs
Vegetables and Additions
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and sliced
Seasonings and Garnish
- 1 tablespoon olive oil
- 1 teaspoon dried oregano (or fresh if available)
- Salt and black pepper, to taste
- Optional: A pinch of red pepper flakes for heat
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking the dish evenly.
- Prepare the Baking Dish: Drizzle olive oil in a small baking dish (around 9×9 inches). Add the cubed feta cheese, then scatter the halved cherry tomatoes and sliced Kalamata olives around and on top of the cheese.
- Season: Sprinkle dried oregano, salt, and black pepper evenly over the feta, tomatoes, and olives. For a touch of heat, add a pinch of red pepper flakes if desired.
- Create the Wells: Use a spoon to make four small indentations or wells in the feta and vegetable mixture. Carefully crack one egg into each well, ensuring the yolks remain intact.
- Bake: Place the dish in the preheated oven and bake for 12-15 minutes. Bake until the egg whites are set and firm but the yolks remain slightly runny for perfect creaminess.
- Serve: Remove from the oven and garnish with freshly chopped parsley or basil. Serve warm with crusty bread or pita to soak up the flavorful juices.
Notes
- Adjust the baking time depending on how you like your eggs – add a couple of minutes for fully set yolks.
- Fresh oregano can be substituted for dried for a brighter flavor.
- For a vegan version, replace eggs and feta with tofu and vegan cheese alternatives.
- This dish pairs well with a side salad or roasted vegetables for a complete meal.
- Use a baking dish size close to 9×9 inches to ensure even cooking.
