Ingredients
Scale
Corn and Oil
- 8 ears fresh sweet corn (shucked, silks removed)
- Olive oil spray (for grilling)
Yogurt Sauce
- ¼ cup plain Greek yogurt
- ¼ cup light sour cream
- ¼ cup freshly grated Parmesan cheese
- ½ oz. taco seasoning
- 1 tbsp fresh lime juice (from ½ lime)
- 1 tsp flake sea salt (or sea salt)
Garnish
- ¼ cup chopped fresh cilantro
- ¾ cup freshly shredded Parmesan cheese
- 1 whole lime (cut into wedges)
Instructions
- Prepare the corn: Spray or brush each ear of corn lightly with olive oil to prevent sticking and to help achieve a nice char during grilling.
- Grill the corn: Place the corn on a preheated grill and cook for approximately 10 minutes, turning often to ensure even cooking and avoid burning. The corn should develop brown spots and become tender.
- Make the yogurt sauce: While the corn is grilling, combine Greek yogurt, sour cream, freshly grated Parmesan cheese, taco seasoning, lime juice, and sea salt in a small bowl. Mix thoroughly and set aside.
- Brush the corn with sauce: Remove the grilled corn from the heat and generously brush each ear with the prepared Greek yogurt sauce, ensuring a good coating.
- Add garnishes and serve: Sprinkle chopped fresh cilantro and shredded Parmesan cheese over the coated corn. Finish by squeezing additional lime juice over each ear for a bright, fresh flavor. Serve immediately.
Notes
- For best flavor, use fresh sweet corn that is in season and at peak ripeness.
- Adjust the amount of taco seasoning to your taste preference or use your favorite blend.
- Greek yogurt can be substituted with mayonnaise for a richer sauce, as commonly done in traditional Mexican street corn.
- Grilling times may vary depending on your grill; ensure the corn is tender before removing.
- Serve with lime wedges on the side for guests to add more citrus as desired.
