Instructions
- Season the chicken: Season the chicken breasts generously on both sides with salt and freshly ground black pepper to enhance flavor.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and fully cooked through. Remove chicken from the skillet and set aside.
- Sauté mushrooms: In the same skillet, add sliced mushrooms and cook for about 5 minutes until they turn golden brown and release their moisture, intensifying their flavor.

- Deglaze pan: Pour in the chicken broth and bring to a simmer, scraping the skillet’s bottom to loosen any browned bits that add rich flavor.
- Add cream: Stir in heavy cream and gently simmer the mixture to combine and start thickening the sauce.
- Melt Asiago cheese: Gradually stir in grated Asiago cheese until fully melted and the sauce thickens. For a thicker sauce, mix flour with water to create a slurry and add it at this stage, stirring to incorporate.
- Finish chicken in sauce: Return the cooked chicken breasts to the skillet, spooning sauce over them. Let them simmer in the sauce for 3-4 minutes to absorb the flavors and ensure an even coating.
- Garnish and serve: Sprinkle chopped fresh parsley over the dish for a bright, fresh finish before serving.
