Description

This Mushroom Asiago Chicken recipe features tender, pan-seared chicken breasts smothered in a creamy Asiago cheese sauce with sautéed mushrooms and garlic. It’s a comforting, flavorful dish perfect for weeknight dinners or special occasions.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 2 cups sliced mushrooms (such as cremini or button)
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Asiago cheese
  • Optional: 1 tablespoon all-purpose flour (for thickening)

Garnish

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Season the chicken: Season the chicken breasts generously on both sides with salt and freshly ground black pepper to enhance flavor.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and fully cooked through. Remove chicken from the skillet and set aside.
  3. Sauté mushrooms: In the same skillet, add sliced mushrooms and cook for about 5 minutes until they turn golden brown and release their moisture, intensifying their flavor.
  4. Add garlic: Stir in the minced garlic with the mushrooms and sauté for 1-2 minutes until fragrant, adding aromatic depth to the sauce.
  5. Deglaze pan: Pour in the chicken broth and bring to a simmer, scraping the skillet’s bottom to loosen any browned bits that add rich flavor.
  6. Add cream: Stir in heavy cream and gently simmer the mixture to combine and start thickening the sauce.
  7. Melt Asiago cheese: Gradually stir in grated Asiago cheese until fully melted and the sauce thickens. For a thicker sauce, mix flour with water to create a slurry and add it at this stage, stirring to incorporate.
  8. Finish chicken in sauce: Return the cooked chicken breasts to the skillet, spooning sauce over them. Let them simmer in the sauce for 3-4 minutes to absorb the flavors and ensure an even coating.
  9. Garnish and serve: Sprinkle chopped fresh parsley over the dish for a bright, fresh finish before serving.

Notes

  • Use a heavy skillet to get a nice sear on the chicken.
  • Adjust the sauce thickness by adding or omitting the flour slurry according to preference.
  • Asiago cheese can be substituted with Parmesan for a slightly different flavor.
  • Serve this dish with steamed vegetables, mashed potatoes, or a side of pasta to complete the meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
