Description

This No Bake Blueberry Pie is a delightful, creamy dessert featuring a crunchy graham cracker crust, a luscious cream cheese layer, and a sweet, thickened blueberry topping. Perfect for warm days or when you want an easy, impressive dessert without turning on the oven.

Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Blueberry Filling

  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Cream Cheese Layer

  • 8 ounces cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs and granulated sugar. Stir well and add melted butter, mixing until crumbs are coated and mixture sticks when pressed.
  2. Form the crust: Press the mixture into the bottom and sides of a 9-inch pie dish evenly. Chill in the refrigerator while preparing the filling.
  3. Make the blueberry filling: In a medium saucepan, combine blueberries, granulated sugar, cornstarch, and water. Stir to coat evenly and dissolve sugar and cornstarch.
  4. Cook the blueberry filling: Heat over medium, bringing to a gentle boil, stirring frequently. Simmer 5-7 minutes until berries break down and filling thickens. Remove from heat and stir in lemon juice and vanilla extract; let cool.
  5. Prepare the cream cheese layer: Beat softened cream cheese until smooth. Add heavy whipping cream and beat until thickened.
  6. Sweeten the cream layer: Gradually add powdered sugar, beating until mixture is light, fluffy, and forms stiff peaks, about 3-5 minutes.
  7. Assemble the pie: Once blueberry filling is cooled to room temperature, pour evenly over the cream cheese layer in crust. Smooth the top with a spatula.
  8. Chill to set: Refrigerate pie for at least 4 hours or overnight until set. Slice and serve chilled.

Notes

  • Make sure the cream cheese is softened to ensure a smooth cream layer.
  • The blueberry filling should be fully cooled before assembling to prevent melting the cream cheese layer.
  • For best texture, refrigerate overnight.
  • Fresh blueberries are preferred for the best flavor but frozen can be used (thawed).
  • Use a hand mixer or stand mixer for the cream cheese layer for best results.
