- 1 pound of ground sausage
- 1 tablespoon of olive oil
Vegetables
- 1 cup of chopped onion
- 1 cup of chopped green bell pepper
- 1 cup of chopped celery
- 2 cloves of garlic, minced
Spices
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1/2 teaspoon of ground black pepper
Grains and Liquids
- 1 cup of long-grain white rice
- 2 1/2 cups of chicken broth
Optional
- 2 tablespoons of chopped fresh parsley
Instructions
- Cook the sausage: In a large pot or Dutch oven over medium heat, add 1 tablespoon of olive oil and the ground sausage. Cook the sausage until it is browned and cooked through, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.
- Remove sausage: Once the sausage is cooked, remove it from the pot with a slotted spoon and set it aside. Leave any rendered fat in the pot.
- Sauté vegetables: In the same pot, add the chopped onion, green bell pepper, and celery. Sauté the vegetables in the rendered sausage fat over medium heat until they begin to soften, about 5 minutes.
- Add garlic: Add the minced garlic to the pot and sauté for another minute until fragrant.
- Add spices: Stir in the paprika, cayenne pepper, oregano, thyme, salt, and ground black pepper. Cook for another minute to toast the spices.
- Add rice: Add the rice to the pot and stir well to coat it in the spice mixture.
- Add broth and sausage: Pour in the chicken broth and return the cooked sausage to the pot. Stir everything to combine.
- Simmer the rice: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.
- Let it rest: Once the rice is cooked, remove the pot from the heat and let it sit covered for another 5 minutes.
- Fluff and serve: Fluff the rice with a fork and stir in the chopped fresh parsley if using before serving.
Notes
- You can substitute ground turkey or chicken sausage for a leaner version.
- Adjust cayenne pepper amount to taste if you prefer more or less heat.
- Fresh parsley adds brightness, but you can omit or substitute with green onions if preferred.
