- Prepare the Potatoes: Heat a large skillet over medium heat. Add 1 tablespoon of olive oil to the skillet to warm up for cooking the potatoes.
- Season Potatoes: Add the diced potatoes to the hot skillet and season them with salt, pepper, garlic powder, and onion powder to infuse flavor.
- Cook Potatoes: Cook the potatoes, stirring occasionally, for 10-12 minutes until they soften and turn golden brown. Then remove them from the skillet and set aside.

- Add Vegetables: Add the chopped onion and red bell pepper to the skillet with the kielbasa for extra flavor and texture.
- Sauté Vegetables: Sauté the onion and red bell pepper for 3-4 minutes until they soften and blend with the sausage flavors.
- Combine Potatoes: Return the cooked potatoes to the skillet, stirring everything together to combine the ingredients evenly.
- Heat Through: Cook the mixture for an additional 2-3 minutes to heat thoroughly and allow flavors to meld.
- Season and Serve: Adjust seasoning with extra salt and pepper if needed. Garnish with fresh parsley or chives and serve hot.
Notes
- You can substitute kielbasa with other smoked sausages if desired.
- For extra crispiness, let the potatoes cook undisturbed for a few minutes before stirring.
- Optional garnishes like fresh herbs add a fresh pop of flavor.
- Adjust seasoning according to your preference, especially salt and smoked paprika.
- This dish pairs well with a simple green salad or steamed vegetables for a balanced meal.
