Ingredients
Scale
Meat and Seasonings
- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning mix
- Salt and pepper to taste
Pasta and Cream Sauce
- 8 oz egg noodles, cooked and drained
- 1 cup sour cream
- 1 can (10.5 oz) cream of mushroom soup
Toppings
- 1 cup shredded cheddar cheese
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef and Onions: In a large skillet over medium heat, brown the ground beef until fully cooked. Add the chopped onion and continue cooking until the onions are softened, about 5 minutes. Drain any excess fat from the skillet.
- Add Taco Seasoning: Stir in the taco seasoning mix into the beef and onion mixture. Follow the packet instructions to thicken the mixture, often by adding a bit of water and simmering briefly.
- Mix Noodles and Creamy Sauce: In a medium bowl, combine the cooked and drained egg noodles with sour cream and cream of mushroom soup. Stir until the noodles are well coated with the creamy mixture.
- Assemble Casserole: Spread the noodle mixture evenly in the greased baking dish. Then layer the seasoned beef mixture evenly on top of the noodles.
- Add Cheese Topping: Sprinkle shredded cheddar cheese evenly over the top of the beef layer.
- Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Rest and Serve: Remove from the oven and allow the casserole to cool for a few minutes before serving to let it set and make serving easier.
Notes
- You can substitute ground turkey or chicken for a leaner protein option.
- For extra flavor, add diced green chilies or jalapeños to the beef mixture.
- The casserole can be assembled a day ahead and refrigerated before baking.
- Make sure to drain the cooked noodles well to avoid a soggy casserole.
- Leftovers store well in the refrigerator for up to 3 days and reheat in the oven or microwave.
