Description

Poor Man’s Husband Casserole is a hearty and comforting baked dish combining seasoned ground beef, creamy noodles, and melted cheddar cheese. This easy-to-make casserole blends savory taco-seasoned beef with creamy sour cream and mushroom soup-coated egg noodles for a flavorful, crowd-pleasing meal perfect for family dinners.

Ingredients

Scale

Meat and Seasonings

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning mix
  • Salt and pepper to taste

Pasta and Cream Sauce

  • 8 oz egg noodles, cooked and drained
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup

Toppings

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Ground Beef and Onions: In a large skillet over medium heat, brown the ground beef until fully cooked. Add the chopped onion and continue cooking until the onions are softened, about 5 minutes. Drain any excess fat from the skillet.
  3. Add Taco Seasoning: Stir in the taco seasoning mix into the beef and onion mixture. Follow the packet instructions to thicken the mixture, often by adding a bit of water and simmering briefly.
  4. Mix Noodles and Creamy Sauce: In a medium bowl, combine the cooked and drained egg noodles with sour cream and cream of mushroom soup. Stir until the noodles are well coated with the creamy mixture.
  5. Assemble Casserole: Spread the noodle mixture evenly in the greased baking dish. Then layer the seasoned beef mixture evenly on top of the noodles.
  6. Add Cheese Topping: Sprinkle shredded cheddar cheese evenly over the top of the beef layer.
  7. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Rest and Serve: Remove from the oven and allow the casserole to cool for a few minutes before serving to let it set and make serving easier.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • For extra flavor, add diced green chilies or jalapeños to the beef mixture.
  • The casserole can be assembled a day ahead and refrigerated before baking.
  • Make sure to drain the cooked noodles well to avoid a soggy casserole.
  • Leftovers store well in the refrigerator for up to 3 days and reheat in the oven or microwave.
