Description

A quick and flavorful Potsticker Stir Fry that combines crispy pan-fried potstickers with a colorful mix of sautéed vegetables in a savory soy-based sauce, topped with sesame seeds and green onions for an easy weeknight meal.

Potstickers

  • 1 lb frozen potstickers or dumplings
  • 1 tablespoon vegetable oil
  • 1 tablespoon vegetable oil (divided)

Vegetables & Aromatics

  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 bell pepper, sliced
  • 1 cup snow peas
  • 1 cup broccoli florets
  • 1 carrot, julienned

Sauce & Garnish

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds
  • 2 green onions, chopped


Instructions

  1. Heat oil: Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat until hot.
  2. Cook potstickers: Add frozen potstickers to the skillet and cook for about 5-7 minutes, turning occasionally until they are golden brown and crispy on all sides. Remove them from the skillet and set aside.
  3. Prepare vegetables: In the same skillet, add the remaining tablespoon of vegetable oil.
  4. Sauté aromatics: Add minced garlic and ginger to the skillet and sauté for 30 seconds until fragrant.
  5. Cook vegetables: Add sliced bell pepper, snow peas, broccoli florets, and julienned carrots to the skillet. Cook for 4-5 minutes until vegetables are tender-crisp, stirring occasionally.
  6. Make sauce: In a small bowl, mix together soy sauce, rice vinegar, and sesame oil.
  7. Combine ingredients: Return the potstickers to the skillet and pour the soy sauce mixture over the potstickers and vegetables. Stir well to coat everything evenly and cook for an additional 1-2 minutes to heat through.
  8. Garnish: Sprinkle sesame seeds and chopped green onions on top.
