Description

This delightful Radish Puff Appetizer features flaky puff pastry topped with creamy goat cheese, thinly sliced radishes, and fresh microgreens, making it a perfect savory bite for any gathering or snack.

Ingredients

Scale

Pastry

  • 2 sheets puff pastry, cut into 12 rectangles
  • 1 beaten egg

Toppings

  • 5 ounces crumbled goat’s cheese
  • 10 to 12 radishes, thinly sliced
  • Microgreens, for garnish
  • 1 teaspoon sea salt

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (200 C) to prepare for baking the puff pastry.
  2. Prepare Pastry: Place the cut puff pastry rectangles onto baking sheets and fold over the two shorter ends to create a small lip, which helps hold the toppings later.
  3. Brush and Prick: Brush each piece of pastry with the beaten egg to give a golden color and shine when baked. Prick each pastry multiple times with a fork to prevent excessive puffing.
  4. Initial Bake: Bake the pastries for 8 to 10 minutes until they puff up and turn golden brown.
  5. Add Toppings: Evenly layer the crumbled goat cheese across the partially baked pastries, then add a layer of thinly sliced radishes on top.
  6. Second Bake: Return the pastries to the oven and bake for another 8 to 10 minutes until the pastry is browned and the radishes become translucent.
  7. Garnish and Serve: Remove from oven, garnish each pastry with fresh microgreens, sprinkle with sea salt, and serve immediately for the best flavor and texture.

Notes

  • Be sure to keep an eye on the pastry during baking to prevent burning.
  • Thin slices of radish work best for even cooking and texture.
  • Microgreens add a fresh, peppery flavor and nice visual contrast.
  • Use chilled puff pastry to ensure it puffs well during baking.
  • You can substitute goat cheese with cream cheese or feta for variation.
