Rocky Road Delight is a decadent no-bake dessert featuring a luscious blend of semisweet and milk chocolate chips, crunchy walnuts and almonds, sweet mini marshmallows, and a touch of vanilla. This easy-to-make treat is perfect for satisfying chocolate cravings with a delightful contrast of textures.

Ingredients

Scale

Chocolate Mixture

  • 1 cup semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1/4 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Mix-ins

  • 1/2 cup chopped walnuts
  • 1/2 cup chopped almonds
  • 2 cups mini marshmallows

Instructions

  1. Combine Chocolate and Condensed Milk: In a microwave-safe bowl, mix the semisweet chocolate chips, milk chocolate chips, and sweetened condensed milk together.
  2. Microwave and Stir: Heat the mixture in 30-second intervals, stirring after each interval, until the chocolate is fully melted and smooth.
  3. Add Flavor and Nuts: Stir in vanilla extract, chopped walnuts, chopped almonds, and mini marshmallows until the mixture is well combined and evenly distributed.
  4. Spread Mixture: Pour and spread the mixture evenly into a greased 9×9-inch baking dish for easy cutting later.
  5. Refrigerate to Set: Place the dish in the refrigerator and chill for 2 hours or until the mixture is firm to touch.
  6. Cut and Serve: Once set, remove from refrigerator, cut into 16 equal squares, and enjoy your Rocky Road Delight.

Notes

  • Use any nuts of your choice or omit them for nut-free variations.
  • If you don’t have a microwave, melt the chocolate and condensed milk gently over a double boiler.
  • Store leftovers in an airtight container in the refrigerator for up to 1 week.
  • You can add dried fruit like cherries or cranberries for additional flavor.
