Description
A hearty and flavorful sausage and potatoes dish featuring seasoned Yukon gold potatoes, bell peppers, onions, and browned breakfast sausage, all roasted to crispy perfection. A simple yet satisfying meal perfect for any time of day.
Ingredients
Scale
Meats
- 1 lb breakfast sausage (links or patties)
Vegetables
- 1.5 lbs Yukon gold potatoes, chopped into bite-sized pieces
- 1 medium yellow onion, sliced
- 1 cup bell peppers, diced (any color)
Seasonings and Oils
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prepare for roasting the ingredients.
- Toss the vegetables. In a large bowl, combine the chopped Yukon gold potatoes, sliced yellow onion, and diced bell peppers with the olive oil, garlic powder, salt, and pepper. Toss everything together until the vegetables are evenly coated with the seasoning and oil.
- Cook the sausage. Heat a skillet over medium heat and cook the breakfast sausage until browned, which should take about 5-7 minutes. If you are using links, slice them into bite-sized pieces before returning them to the skillet to ensure even cooking.
- Combine sausage and vegetables. Transfer the cooked sausage to the bowl with the vegetable mixture and mix well. Then spread the combined mixture evenly on the prepared baking sheet.
- Roast the mixture. Place the baking sheet in the preheated oven and roast for 25-30 minutes. Stir the mixture halfway through the roasting time to promote even cooking and browning.
- Serve. When the sausage and potatoes are crispy and golden brown, remove them from the oven and serve warm for a delicious, comforting meal.
Notes
- Using Yukon gold potatoes provides a creamy texture and holds their shape well during roasting.
- You can customize the bell peppers’ color based on preference or availability.
- To reduce fat, opt for lean sausage varieties.
- Stirring halfway through roasting helps achieve uniform crispiness.
- This dish can be prepared entirely on the stovetop if you choose to skip roasting, but roasting enhances the flavor and texture.
