Description
A rich and creamy Sausage Queso Dip made with real cheddar cheese, ground pork sausage, diced tomatoes with green chilies, and corn. Easy to prepare on the stovetop and perfect for serving as a warm appetizer with tortilla chips for parties or casual gatherings.

Sausage Mixture
- 1 lb ground pork sausage
Dairy
- 8 oz cream cheese (no need to soften)
- 8 oz medium cheddar cheese (shredded, reserve some for garnish)
Veggies and Canned Goods
- 20 oz Rotel diced tomatoes & green chilies (two 10 oz cans, un-drained)
- 15 oz can corn (drained)
- 1 Roma tomato (diced, for garnish)
- 1 Tbsp chives or green onion, finely chopped (for garnish)
Instructions
- Brown the sausage: In a large dry pot or deep skillet over medium-high heat, cook the ground pork sausage for 10-12 minutes, breaking it apart with a spatula. The sausage will release enough oil to grease the pan. Once browned, remove excess grease by pushing a paper towel around the pan with a spatula until fully saturated, then discard the grease.
- Melt the cream cheese: Cut the cream cheese into pieces and stir them into the browned sausage until the cream cheese is fully melted and incorporated into the meat.
- Add remaining ingredients: Stir in the two cans of un-drained Rotel tomatoes with green chilies, drained corn, and shredded cheddar cheese (reserve some cheddar for garnish). Cook over medium heat, stirring occasionally, just until the mixture is bubbly and the cheese has melted. Taste and season with salt and pepper as desired.
- Garnish and serve: Remove the dip from heat and top it with the diced Roma tomato, reserved cheddar cheese, and chopped chives or green onions. Serve warm with tortilla chips.
Notes
- Be sure to use sausage labeled as “sausage” to get the right flavor and fat content.
- Removing excess grease from the cooked sausage will prevent the dip from being too oily.
- If you prefer a spicier dip, use Rotel with extra hot diced tomatoes and chilies.
- This dip is best served fresh and warm but can be reheated gently on the stovetop or in a microwave.
- To make it milder, drain the Rotel tomatoes before adding.
