For the Casserole:
- 1 lb (450 g) ground beef
- 1 medium onion, diced
- 3 cups diced Yukon Gold or Russet potatoes
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (15 oz) diced tomatoes, undrained
- 1 cup frozen corn
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For the Topping:
- 1 cup shredded cheddar cheese
Instructions
- Cook the ground beef and onions: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon. Add the diced onions and cook for an additional 3–5 minutes until softened. Drain any excess grease and set aside.
- Prepare the slow cooker layers: Lightly grease the inside of your slow cooker. Spread the diced potatoes evenly as the base layer, then add the cooked beef and onions. Top with frozen corn and undrained diced tomatoes in even layers.
- Mix the creamy sauce: In a small bowl, combine the cream of mushroom soup, sour cream, garlic powder, smoked paprika, salt, and pepper. Spread this mixture evenly over the layered ingredients in the slow cooker.
- Slow cook the casserole: Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours until the potatoes are tender and fully cooked.
- Add cheese topping: During the last 15–20 minutes of cooking, sprinkle the shredded cheddar cheese evenly over the casserole. Cover and allow the cheese to melt completely.
- Serve: Gently stir the casserole to slightly combine the layers, then serve hot. Optionally garnish with extra cheese or fresh herbs to enhance flavor and presentation.
