Spiced Chickpeas

Salad and Dressing
- 1 head lettuce*
- 1 cup cherry tomatoes, quartered
- 1 English cucumber, diced
- 1 avocado, diced
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon tahini
Instructions
- Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the chickpeas.
- Season Chickpeas: In a bowl, combine the drained chickpeas with 1 teaspoon of sea salt, 1/2 teaspoon of black pepper, paprika, cumin, and turmeric. Toss thoroughly until the chickpeas are evenly coated with the spices.
- Roast Chickpeas: Spread the seasoned chickpeas evenly on a foil-lined baking tray and bake for 20 minutes until they are crispy and flavorful.
- Prepare Vegetables: While the chickpeas roast, chop the lettuce and dice the cucumber, quarter the cherry tomatoes, and dice the avocado to prepare the salad base and toppings.
- Make Dressing: In a small bowl, whisk together the lemon juice, tahini, remaining 1 teaspoon of sea salt, and 1/2 teaspoon of black pepper until smooth. If the dressing is too thick, gradually add water, one teaspoon at a time, until it reaches a drizzleable consistency.
- Assemble Salad: In a large bowl, combine the lettuce and cucumber and toss them with half of the dressing. Then, top the salad with the roasted chickpeas, tomatoes, avocado, and drizzle with the remaining dressing.
