- ¾ cup powdered sugar

- 3 Tablespoons strawberry gelatin mix (from a 3.4 oz package)
- 1 cup heavy whipping cream
- 8 ounces whipped cream (such as Cool Whip)
- 8-10 medium strawberries (sliced)
Instructions
- Prepare the crust: In a medium bowl, combine the crushed graham cracker crumbs, sugar, and 1 teaspoon of vanilla extract. Add the melted unsalted butter and mix thoroughly until the crumbs are evenly coated and hold together when pressed. Press the mixture firmly into the bottom of a 9×13 inch pan to form an even crust. Place in the refrigerator to chill while preparing the filling.
- Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar, the remaining 1 teaspoon of vanilla extract, and lemon juice, continuing to mix until fully incorporated and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream and the strawberry gelatin mix into the cream cheese mixture until well combined. Finally, fold in the whipped cream (such as Cool Whip) for extra lightness.
- Assemble the dessert: Pour the strawberry cream cheese filling over the chilled graham cracker crust and spread evenly. Arrange the sliced strawberries on top in a decorative pattern. Refrigerate the dessert for at least 4 hours or until fully set before slicing into approximately 9 to 10 pieces and serving.
