- 2 tsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp mirin (or substitute with 1 tbsp dry sherry or sweet cooking wine)

- 2 tbsp vegetable oil (canola or peanut oil)
- 8 green onions, ends trimmed, cut into 7 cm (2.5 inch) lengths with white parts separated from green parts
- 2 garlic cloves, finely chopped
Instructions
- Mix Sauce: In a small bowl, combine toasted sesame oil, light soy sauce, dark soy sauce, oyster sauce, and mirin to create the flavorful sauce mixture.
- Cook Noodles: Boil the fresh noodles according to the package instructions. Once cooked, drain and rinse quickly under cold tap water to stop cooking and prevent sticking.
- Sauté Garlic and White Onion Parts: Heat vegetable oil in a large deep non-stick skillet or wok over high heat. Add the white parts of the green onions and stir-fry for about 20 seconds. Add the finely chopped garlic and stir for another 10 seconds until lightly golden and aromatic.
- Add Noodles and Sauce: Add the drained noodles to the skillet, then pour the prepared sauce over them. Toss and stir-fry the noodles continuously for 1 1/2 minutes to allow slight caramelization and full flavor absorption. If heat is low, extend cooking time to ensure proper caramelization.
- Add Green Onion Greens: Finally, add the green portions of the green onions and toss for about 20 seconds until just wilted. Serve immediately while hot and flavorful.
