Base Layers
- 1½ sleeves Club Crackers (approximately 50-60 crackers)
Caramel Sauce
- ½ cup (115g) unsalted butter
- ½ cup (100g) brown sugar
- ¼ cup (60ml) heavy cream
Chocolate Topping
- ½ cup (120g) creamy peanut butter
- 1½ cups (265g) semisweet chocolate chips
Optional Garnish
- Sea salt flakes for topping
Instructions
- Prepare the Pan: Line a 9×9 inch baking dish with parchment paper, ensuring to leave an overhang on the sides for easy removal of the bars after chilling.
- Layer Crackers: Arrange a single even layer of Club Crackers across the bottom of the parchment-lined pan to create the base.
- Make Caramel: In a medium saucepan over medium heat, melt the butter and brown sugar together, stirring constantly. Once melted, add the heavy cream and continue to simmer for 4 to 5 minutes, stirring frequently until the caramel thickens slightly.
- Layer Caramel & Crackers: Pour half of the prepared caramel sauce evenly over the cracker layer. Add a second single layer of crackers on top, then pour the remaining caramel evenly over this layer. Finally, add a last layer of crackers to complete the stack.
- Prepare Chocolate Layer: In a microwave-safe bowl, combine the semisweet chocolate chips and creamy peanut butter. Microwave in 30-second intervals, stirring well each time, until the mixture is fully melted and smooth. Spread this chocolate-peanut butter mixture evenly over the top cracker layer.
- Chill and Slice: Optionally sprinkle sea salt flakes on top for added flavor contrast. Refrigerate the assembled bars for at least 2 hours, or until fully set. Use a sharp knife to cut into 16 squares before serving.
