Instructions

  1. Prepare the crust: In a medium bowl, combine the crushed graham crackers and 2 tablespoons of sugar. Pour in the melted butter and stir until the mixture resembles wet sand with all crumbs coated. Press this mixture firmly into the bottom of a springform pan or your preferred baking dish to form an even crust layer. Refrigerate to set while preparing the filling.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the sugar and continue beating until creamy. Pour in the heavy cream, vanilla extract, lavender syrup, and neon lavender food coloring gel. Mix thoroughly until the filling is uniform in color and texture with no lumps.
  3. Assemble the cheesecake: Pour the cream cheese mixture over the chilled graham cracker crust, spreading evenly. Smooth the top with a spatula.
