Vegetarian Rye Bread, Onion and Apple Stuffing Ingredients
- 2 tablespoons oil
- 2 medium onions, chopped
- 3 medium apples, cubed
- 4 thick slices rye bread, cut into 1 inch cubes
- 1 tablespoon apple cider vinegar
- 1 teaspoon dried thyme leaves
- 1 teaspoon dried sage
- 1/4 cup butter (or more to taste)
- Salt & pepper to taste
- 1 bunch parsley, chopped
Instructions
- Heat oil and cook onions and apples: Heat the oil in a large skillet over medium heat. Add the chopped onions and cubed apples to the skillet. Cook, stirring occasionally, until the onions and apples start to soften, which should take around 3 minutes.
- Add rye bread and cook: Add the rye bread cubes to the skillet with the onions and apples. Continue cooking until the bread becomes wet from the juices released by the apples and onions, about 10 minutes. If the mixture becomes too dry or it’s taking too long, add a splash of water, white wine, or chicken stock to moisten.
- Season and add butter: Stir in the apple cider vinegar, dried thyme, dried sage, butter, salt, and pepper. Cook for another approximately 4 minutes, or until the butter has melted fully and coats the stuffing evenly.
- Add parsley and serve or chill: Stir in the chopped parsley. Serve the stuffing immediately or chill for up to 24 hours before reheating as desired.
Notes
- For a vegan version, substitute butter with a plant-based alternative.
- You may adjust seasoning according to taste, adding more herbs or spices if desired.
- If you plan to make ahead, store the stuffing covered in the refrigerator for up to 24 hours before reheating.
- Add a splash of vegetable broth instead of chicken stock to keep the dish vegetarian.
